Wendougee DATA S (summary 1 min read)
In my opinion, the Wendougee DATA S is one of the most capable prosumer dual-boiler espresso machines on the market. However, I don't think it is designed for beginners. Its strength lies in its ability to control both pressure and flow, and to repeat the same profile consistently.
Some of the highlights of the Wendougee DATA S include the gear pump, which profiles pressure and flow from 0.1–12 bar in 0.1-bar increments using the E-Bar app (iOS/Android). It also connects to the Wendougee ecosystem, which allows you to connect to a scale for grinding by weight, connect to Wendougee grinders and save grind sizes for each profile, and use the sync function to set the shot time; the grinder will then adjust automatically. This feature is currently only available on the ARES and RKONE models (coming to MILO soon). The machine also has 316L stainless steel boilers (1.8 L steam boiler and a 0.8 L brew boiler in a saturated group head design with a standard 58 mm portafilter size) and high-quality, Genuine commercial-grade components from European brands, such as a WIKA pressure sensor and pressure gauge from Germany, an Italian GICAR flow meter and ODE solenoid valves from Italy.
One drawback is that you only get a wooden paddle with which to start and stop the pre-programmed profile, More control and the settings and profile programming require the E-Bar app, the app still improving but it does experience some glitches. If you are a beginner or on a budget then in my opinion, you could start your espresso journey with something like Wendougee LITA or WPM Primus or even Fellow Espresso Series 1.

What is Wendougee DATA S?
The Wendougee DATA S is a dual-boiler home espresso machine that offers full pressure and flow profiling, a La Marzocco-style saturated brew group, and a commercial-grade gear pump. The sale price for the DATA S in Europe is around €3,695-3950.
I've sold and used a lot of espresso gear, and the Wendougee DATA S espresso machine is the one that ended up on my own counter and stayed there. So this isn't me reading a spec sheet back to you. It's what I actually think after living with it every day for close to a year.
Let me talking a bit about Wendougee. It started in 2014 as a specialty coffee shop in China, grew into a small chain, and then started building its own equipment. The brand is newer than some of the Italian names you might know, and yes, it's made in China, which makes some people lose interest even before they've actually looked at the products offered by Wendougee.
The Wendougee DATA S caught my attention when I saw that no corners were cut. The parts inside the machine are sourced from the same European factories used by major brands. The chassis is robustly constructed and the engineering is meticulous in areas that most machines neglect. This is a manufacturer conducting real R&D.
When I opened it up, the DATA S it looked and Felt like a commercial machine.
I was pleasantly surprised when I checked the inside of the machine, the flow meter comes from GICAR which is a well-known Italian manufacturer. The pressure sensor and the steam pressure gauge are provided by WIKA, which is a German brand. The solenoid valves also come from an Italian company ODE, which also supplies La Marzocco. The commercial-grade gear pump used in the machine is created by the Wendougee itself. and I could see that the company does not compromise on the quality of the parts used in this machine. The boilers used in the Wendougee DATA are made from 316L stainless steel, It is considered surgical-grade due to its anticorrosive properties, and La Marzocco uses it in its machines as well.
There are few details that I appreciate more than I expected to. For instance, the hot water runs through the copper pipes instead of plastic or PTFE tubing. Personally, I would have preferred stainless steel, but copper is still a great choice. Another thing that I think makes the Wendougee DATA S espresso machine extremely thermally stable is its similarity to the Linea Mini and La Marzocco GS3. The cold water gets preheated by running through a pipe inside the steam boiler before it reaches the saturated brew boiler. This process helps to keep the brew boiler thermally stable, preventing thermal shock when cold water enters the boiler.
I do like that Wendougee designed the machine in a way that each part is easy to access. The maintenance or repair of the machine is quite simple. You can even drain the steam boiler from underneath, which might not sound exciting, but anyone who's owned an espresso machine for some time will appreciate that is when it's time for descaling or routine maintenance.
I like that it heats up quickly. I have the 2800W model and it's ready to brew in under 10 minutes. By that, I mean that the steam is ready and the brew boiler has reached the target temperature. However, I usually wait 15 minutes for the portafilter to heat up properly.
The steam performance of Wendougee DATA S was quite the surprise to me. the machine delivers proper commercial-level steam performance. The steam boiler is insulated which helps it maintain the temperature and save on energy. and the pressure can go up to 2.5 Bar on 140 degrees Celsius, I don't believe anyone needs this much pressure, but it's nice to have the option.
The group head structure is similar to La Marzocco's, using the same shower screen layout that allows for plenty of experimentation. I can swap in different shower screens such as Sworksdesign, IMS, and E&B, Pesado and see how each one changes the way water is distributed and how evenly the coffee puck is saturated.
the gear pump and mechanical needle valve restrict the maximum flow rate to 12 ml/s. This gives me another way to experiment with my extractions. Another thing I really appreciate about Wendougee is the support. Wendougee continues to release the firmware updates on regular basis that help the machine and the app gain new features and small fixes over time however, it is still far from perfect, but hopefully it will get there!
What is Wendougee E-Bar App?
The Wendougee E-Bar app is the application that helps in maintaining control over different features of Wendougee DATA S and other Wensougee products like MILO, ARES, LITA. It runs on both IOS and Android devices, and it connects over Bluetooth, and it's where you shape how the machine pulls your shot and manage your extraction. With the help of this app, you can design the pressure or flow curve or both (You can only do both when designing your profile, not when brewing manually), for the profile that you want the machine to follow during extraction. The Wendougee E-Bar app also allows you to save recipes, including the grind size and speed for each recipe when connected to MILO (soon it could add the grind by sync function). While also it can connect to the ARES through grind by sync so it keep the brewing time consistent while the grinder does adjustment automatically.
In simple terms, I create a profile, and the DATA S follows the profile every time. I can brew using a pressure Profile or flow-priority profile. I have full control over the shot, which is something I have grown to appreciate, also Pair it with a compatible scale like BooKoo and a grinder like MILO, and your entire setup works together seamlessly.

Note: Connecting a scale adds two extra lines to the graph i.e. Weight Volume (W.V.) in the cup and Total Weight (W.T.) Which provides me with extra insight into what is happening to the puck during extraction?
I found it quite tempting that the app offers flexibility and consistency. Once you have a profile Dialled in, the machine keeps on repeating it every time for that type of coffee. When I switch to a different recipe, I just select the saved profile instead of starting over or start with profile as a starting point and modify it as needed. There is also a community from which I can download other people's profiles. I can try their profiles; I usually use them as a starting point. In my opinion, the app's biggest advantage is the regular updates that add new features to the machine via firmware. I don't believe there's another product on the market that can do this besides the WPM Primus. A few other machines might accept firmware updates, but I'm not aware of them.
However, as for the date of publishing the Wendougee DATA S can't change the temperature during a shot, and you'll need a supported scale, like a BooKoo or Acaia(coming soon) for true brew-by-weight. however, you can do control the weight of the shot by setting the volume of water that go through the group head. And the app still has some glitches, but it has become much more stable with recent updates.
What does Wendougee DATA S espresso machine look like?

When it comes to the look of the Wendougee DATA S I feel it nailed two important points to me, it is a modern sleek and stylish machine with elegant aesthetics without sacrificing the tactile and traditional look. The Wendougee DATA S really adds rich café vibes to place. I think the minimalist and modern design of this machine gives it a clean and polished look. One thing I've noticed is that even after owning this machine for more than a year, I still enjoy looking at it on the bar. However, given its size, I think this machine needs a dedicated coffee corner. I don't think its place is in the kitchen or a big kitchen.
Why Wendougee DATA S is called "The Mockingbird Machine"?
It was actually given this nickname by Marko from Bella Barista during one of his reviews. He referred to it as such because it can easily replicate any espresso profile from any other machine. So if you want to replicate the profiles from other espresso machines like Decent DE1, Profitec Pro 800, or La Marzocco Linea Mini in order to run them on DATA S, you can easily do it so.
Is Wendougee DATA S beginner friendly?
To keep it simple YES, but and this is a BIG but, I Don't believe it is the place to start your coffee journey. However, I do think, it is one of the best upgrades available in the market.
From my personal experience, I would say that DATA S is beginners friendly so my girlfriend has no problem using it and enjoy perfect cup of coffee. However, It also has many features that someone who is just starting to enjoy coffee as a hobby may not understand. Worse still, they may end up making bad coffee because they are not yet aware of all the variables that can affect an espresso shot.
As I have mentioned before, Wendougee DATA S is a variable pressure espresso machine due to which it does offers complete control over the way you brew your espresso. The features present in DATA S are quite advanced and exciting but they only prove useful once a person masters the basics of making a good espresso. If you are completely a novice then it's much better to focus on the basic steps such as: selecting the right freshly roasted coffee beans, puck prep, dialling the grinder, and mastering the brewing techniques before start playing with pressure profiling and flow control, even if it's tempting. This doesn't mean that the beginners cannot use DATA S. You can still load simple profile like flat 9 bar with simple pre-infusion and brew the coffee using that profile. Once you master the basics and improve your coffee brewing skills, you can start exploring other features and play with pressure and flow.
You must keep in mind that Wendougee DATA S espresso machine is the flagship model From Wendougee. If you're new to coffee or have a tight budget, you might not want to start with the DATA. Consider options like the WPM Primus, which gives you access to a gear pump at a low price, or the Wendougee LITA, which gives you access to the full Wendougee ecosystem with its dual vibratory pump setup.
What is the idea behind gear pump and is it important?
Most espresso machines use one of three types of pumps. The small vibration pumps found in most home machines move a piston back and forth dozens of times a second. They're cheap and compact, but they're also noisy and produce a pulsing flow. Step up to a prosumer or café machine, and you'll usually find a rotary pump. It's smooth and quiet, but it runs at a fixed speed, so you typically dial in 9 bar once, and that's your shot.
A gear pump works differently. Two meshing gears spin inside a close-fitting casing, trapping water between the teeth, carrying it around the edges, and pushing it out the other side. Each rotation moves a fixed amount of water, giving you a smooth, steady flow without the pulsing of a vibration pump. what this allows the machine to do. Because the amount of water moved depends on how fast the gears spin, the machine can adjust the pump speed on the fly to follow an exact pressure. On the Wendougee DATA S, this is controlled by a WIKA pressure sensor and a GICAR flow meter.
That's why you'll find gear pumps in serious Pressure profiling machines like the La Marzocco Strada EP, the WPM Primus, and the Rocket R Nine One. To be clear, a gear pump doesn't make better coffee by itself. What it gives you is much more control. What you do with that control is up to you.
So, is it important? It depends on what you want. If you enjoy a classic espresso at a steady 9 bar, a good rotary pump, or even a vibration pump, can make excellent coffee, and you don't need a gear pump at all. But if you want to shape the shot with a long, gentle pre-infusion, pressure ramps, or a declining pressure curve for a light roast, and repeat those results consistently, then a gear pump is the way to go. And I think that's exactly the kind of home barista the Wendougee DATA S is built for.

How does pressure and flow profiling work on the DATA S?
For readers who do not know what pressure profiling and flow control is, let me explain. The word "profiling" refers to changing the pressure while the shot is running. This is not possible in all of the machines as certain espresso machines do not possess the profiling This feature maintains the same pressure or flow from start to finish. However, pressure profiling and flow profiling are different things: pressure profiling refers to changing the water pressure, whereas flow profiling means changing the flow rate of the water. Nevertheless, pressure and flow work together: pressure = flow x resistance.

As far as the Wendougee DATA S espresso machine is concerned, you can only choose one option a time. If you want to do pressure profiling, the flow will remain uncontrolled throughout the shot. If you want to do flow profiling, the pressure will be adjusted to try to achieve the flow you're aiming for through flow priority mode. It will not be possible for you to adjust both. However, it can do both pressure and flow profiling if you preprogram the profile and choose whether you want each stage to be pressure profiling or flow priority.

The profiling is done on the machine according to a curve which consists of different stages and you can add amny stages as needed.
What is a needle valve? What does it do?
The needle valve is a component inside the Wendougee DATA S that controls the maximum quantity of the water that can flow through the group head during brewing process. The needle valve helps keep the water flow under control even if the app asks the machine to use more water. Although majority of the pressure profiling espresso machines allow the user to adjust only the pressure through an app or touchscreen, the DATA S is different as it uses a mechanical valve. This valve is located under a small opening on the top of the machine. If needed, it can be adjusted with a screwdriver. I believe it is a welcome addition and that more machines should offer this feature, unlike E61 group head machines. These machines use a fixed gicleur with a 0.6 mm or 0.8 mm hole to control the maximum flow.

Is the DATA S good for light roasts?
In general, light-roasted beans are usually harder to extract than medium or dark roasts. If water flows through the espresso at high speed or under extreme pressure, it can become under-extracted due to channeling, or due to insufficient contact time with the water. This is where pressure profiling becomes a great option for experimentation, as it allows you to control the bloom phase. the water contact time, the puck saturation speed, the extraction time, and the water flow through the puck.
The Wendougee DATA S helps resolve this issue by offering you more control over the brewing process. For example, you can begin the brewing with a gentle pre-infusion in order to slowly soak the coffee grounds. Then you will gradually increase the pressure then end with ramp down. These features help bring out more sweetness and balance in the cup.

What is inside the DATA S machine? Is the quality of its parts any good?
I believe the Wendougee DATA S has an impressive exterior, but it also contains some of the highest-quality parts I saw on home espresso machine. It feels solid, well-built, and designed to last. With repair and maintenance in mind, it is designed to provide easy access to almost all the components.

The body is made of durable stainless steel, while the hot water travels through copper pipes and a stainless-steel water distribution block instead of plastic parts which is always welcome. The only plastic parts are used in areas where the water stays cool, The only plastic parts are used in areas where the water remains cool or not for consumption, such as the water tank, drip tray etc.
If we look inside, it becomes evident that the Wendougee DATA S uses many of the same components found in commercial espresso machines. Both boilers are 316L stainless steel boilers, 1.8L steam boiler and a 0.8L saturated group head, a German-made WIKA pressure sensor for accurate pressure readings, a WIKA pressure gauge, and an Italian GICAR flow meter to measure water flow precisely. It also includes high-quality Italian ODE solenoid valves. All of which help the machine perform consistently.

Do I need the E-Bar App to use the DATA S?
Well that depends on your need. The DATA S gives you the option to program the front paddle to a specific profile, but for any other modifications, you will need to use the app.
So if you are talking about making espresso in the morning then you don't need the E-Bar app. As the brewing profiles can be loaded on the Wendougee DATA S machine, you can brew your espresso by using the uploaded profile to the paddle and the steam pressure can be monitored through the WIKA gauge that is located at the front of the machine. However, if you want to pressure profile realy time or build a profile, it cannot be done without the E-Bar app. As the machine doesn't possess a built-in display, the E-Bar app is the only place where you create and edit brewing profiles, adjust pressure and flow settings, save recipes for different coffee beans, and view live brewing graphs during extraction.
the E-Bar app isn't perfect yet. Some clients reported occasional bugs, and it can take a little time to get used to the layout. however, Wendougee regularly releases software updates, so the app continues to improve over time.
How does the DATA compare to the Decent DE1 and the LITA?
As far as the comparison between the Wendougee DATA, Wendougee LITA, and Decent DE1 is concerned, these three machines look similar in case of their functionality. However, they took an absolutely different approach when it comes to the technology to produce espresso. There not a shred of doubt that machines produce amazing espresso. However, in order to understand how these machines produce such highly quality espresso, we need take a look inside these machines. The Wendougee DATA S and Wendougee LITA use the exact same approach, which is the traditional boiler approach. It is more reliable, has a better lifespan, and the possibility of having something breaking on you is much less due to its simplicity. On the other hand, Decent DE1 took an absolutely different approach. Decent uses thermal blocks, which instantly heats the water until it brews or steams milk. However, Decent does provide a superior level of control in comparison to the Wendougee DATA S and Wendougee LITA, but that goes only when you are talking about the temperature profiling. Also, the Decent is limited to 8 ml/second of water flow however, the new Decent Bengle incrased it to 12 ml/second.
Both Decent and Wendougee machines give you the ability to pressure profile your shot and will give you an amount of control over your extraction and how you are basically experimenting with your coffee. One thing that Decent offer that the Wendougee does not is temperature profiling. In the Decent, you can increase and decrease the temperature of your shot, while on the Wendougee, that is not particularly an option yet. Another thing that the Wendougee offers and the Decent does not is that on the Wendougee, you can brew and steam milk at the same time, thanks to the dual boiler. The difference between the Wendougee DATA and the Wendougee LITA goes down to the boiler sizes and pump type.
The DATA S has far bigger boiler sizes due to which it can comfortably handle light commercial use. I think it can produce up to 100 cups a day without any problems. On the other hand, LITA is designed mostly for home use. The important thing is that, both DATA S and LITA give you extremely stable temperature with the exact same technology from the inside.
Also that Wendougee LITA utilizes dual vibratory pumps, while the DATA S utilizes a high-precision commercial-grade gear pump. In case of Decent, it contains two vibratory pumps. However, one of these pumps is for cold water and the other for hot water. It's not to smooth the frequency of the water disturbing the puck.

The Wendougee DATA S is a machine that came to fill up a big gap that has existed in the market for a long time. It's a dream come true for a lot of coffee enthusiasts who wanted to have the extreme control over their extraction, including myself. However, I do not believe it's a machine to start your coffee journey. The ability to have all this power and control over your extraction also opened a lot of space to do mistakes. What I would recommend for people who are just starting is to upgrade to the Wendougee DATA S after a couple of years, once they're more invested in the hobby and their current coffee machine starts becoming the limiting factor. Also, you need to keep in mind that the Wendougee DATA S is the flagship, which does provide a gear pump with huge boilers and can handle a commercial level demand. Another alternative for an enthusiast home barista who wants to upgrade their machine is the Wendougee LITA LA. They are great machines so you will not be compromising a lot. The only difference is the pump. Another valid option for you is WPM Primus, if you want less control, similar quality, with the gear pump option.
